Cut the onions and peppers into cubes and s associate them with a little oil in a frying pan until golden. Then we leave them in a deep bowl and add diced dried tomatoes, pepper, thyme and a pinch of salt. Stir gently and set aside.
We melt the oil on a slow fire.
In a large bowl we mix eggs, crushed cheese and yellow cheese into cubes. We mix well and add the already cold vegetables and melted butter, this is your stuffing for keto patties.
In a large bowl we put warm water in it for 30 seconds or until softened we dip the rice crust. Then we pull it out, put it on a cutting board and fill it with a large tablespoon of stuffing. Next, we fold carefully and make squares.
Place in a baking tray with baking paper underneath and bake in a heated oven at 180 degrees about 20-25 minutes, until the patties are golden and a stuck stick comes out dry.
